Stacked Jack-O-Lanterns Mini Doughnuts Recipe

JACK O LANTERN DOUGHNUTS

This Halloween, celebrate with this mini tower of cute pumpkins! Easy to bake in the mini doughnut pan and easy to decorate with candy melts and little candy eyeballs.

Ingredients:

- 1 cup cake flour, sifted
- 1/3 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1/3 cup buttermilk
- 1 egg, lightly beaten
- 1 tablespoon butter, melted
- Candy Eyeballs
- Gum Drops
- Orange Candy Melts
- Black Candy Melts
Directions:
1. Preheat oven to 218°C. Grease the mini doughnut pan.

2. In large bowl, stir together flour, sugar, baking powder, salt and nutmeg. Add buttermilk, egg and butter; stir until just combined. Fill each doughnut cup approximately 1/2 full with 1 tablespoon of batter. Spread batter around center post to edges of cup.

3. Bake 6-7 minutes or until the top of the doughnuts spring back when touched. Cool in pan 3 minutes; remove to cooling grid. Allow doughnuts to cool.

4. Melt orange candy melts according to package directions. Use spatula and melted orange candy to ice bottoms of doughnuts. Use toothpick as needed to clear center hole. Place doughnuts, candy side up, on parchment-covered board. Chill until firm, 10 to 15 minutes.


6.  Remelt orange candy melts candy as needed. Use melted orange candy in cut decorating bag to pipe section lines. Chill until firm, about 3 to 5 minutes. Melt black candy melts candy according to package directions. Use melted black candy in cut decorating bag to pipe smile. Chill until firm, about 3 to 5 minutes.

For stem on top doughnut, use scissors to cut off top 1/3 of green gum drop. Use fingers to roll into a stem. Use melted orange candy in cut decorating bag to attach candy eyeballs and stem in hole area. Chill until firm, about 3 to 5 minutes.

7. Use melted orange candy melts candy in cut decorating bag to attach five doughnuts in a stack on parchment-covered board. Chill until firm, about 3 to 5 minutes.
